Sundried Tomatoes

Well, the sundried tomatoes are done. And it only took two and a half days.

After spending the better part of an hour cutting the grape and cherry tomatoes in half, sprinkling them with salt, and putting them on baking drying racks to lay in the sun, we were rewarded with these wonderful little sundried tomatoes after just a couple days!

(I have to admit, it was all Chris' idea. He told me to say that.)

He also aptly noted, "These taste like fruit roll ups. Tomato fruit roll ups."

They really do. I didn't expect them to dry as small as they did, but I guess it makes sense. The two large racks we began with fit into a quart ziploc baggie (like the kind you use for your toiletries when you fly). Chris wants to try San Marzanos and other tomatoes next year, because he heard those dry/juice/sauce better.

We froze them and can't wait to use their concentrated flavors in ... I dunno.... any recipe ideas for sundried tomatoes NOT including cut up on pasta?
