Today we put some of that broccoli to use in a lentil and mushroom casserole.
1 cup brown rice + 1 cup lentils cooked together in 4 cups chicken stock and 3 cloves garlic
1/2 onion
10-12 mushrooms (depending upon size)
2 cups broccoli
1 tablespoon olive oil
1 tablespoon butter
1/2 teaspoon cumin, cayenne, black pepper, oregano, bouquet garn1
1 teaspoon sea salt
1 cup yogurt
1 cup cheddar
1/2 cup parmesan
Pretty simple recipe.
Start by cooking the rice and lentils together in the stock.
While that is cooking, dice your onion and mushrooms, and then lightly sauté them in the butter and oil. Add spices/salt to this when it is finished.
Once the rice/lentils are done cooking add those to the onion/mushroom mixture, along with the yogurt, and mix well.
Move the combined mixture to a casserole dish and top with the cheeses.
Cook uncovered in a 375o oven for 20-30 minutes, depending upon how crunchy you like your cheese.
